I had them in the UK last month and loved them.  Have tried to make them a couple of times, my one tip - melt only half of the chocolate. I failed to read this first time around, but quite frankly they still turned out really well!&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;I know, for my &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;American&lt;/span&gt; friends the recipe is in grams.  DO NOT BE AFRAID. If you have a good kitchen scale you'll have no worries.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;200g Butter&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;300g Quality White Chocolate&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;3 Medium eggs&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;150g caster sugar&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;1tsp vanilla extract&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;200g plain flour&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;100g dried cranberries&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;Pinch of salt&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt; &lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;Oven 180c / gas mark 4&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt; &lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;In a heatproof bowl set over a pan of barely simmering water, melt the butter with 150g of the chocolate, whisking well until smooth. Remove from the heat and allow to cool.&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt; &lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;In a separate bowl, beat the eggs, sugar and vanilla together until pale. Beat in the melted chocolate mixture.&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;Fold in the flour and salt. Pour into baking tin. Strew the cranberries and the other 150g white chocolate evenly over the batter. Poke down with the end of a teaspoon!&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt; &lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span lang="EN-GB"&gt;Bake for 20 – 25 minutes or until the top is firm but the inside is still a bit soft.&lt;/span&gt;&lt;/p&gt;            &lt;p class="MsoNormal"&gt; &lt;/p&gt;  &lt;p class="MsoNormal"&gt;Whip egg whites until soft peaks appear (and so you can turn the bowl upside down with out anything falling out)&lt;/p&gt;  &lt;p class="MsoNormal"&gt;Whip in the sugar and then sift in the cocoa and corn starch folding in with a metal spoon.&lt;/p&gt;  &lt;p class="MsoNormal"&gt;Place on a well greased cookie sheet and bake at 360F for 20 mins.&lt;/p&gt;  &lt;p class="MsoNormal"&gt; &lt;/p&gt;  &lt;p class="MsoNormal"&gt;Allow to cool.&lt;span style=""&gt;  &lt;/span&gt;Whip the cream and melt the chocolate and then fold the two together and line the meringue, then roll the roulade into shape.&lt;span style=""&gt; Beat until pale and white, then add vanilla and strawberries until well combine. It is also known as refrigerator cake. This is a recipe i started making back in the days i worked in a tea room. (you may need a little extra)&lt;br /&gt;3 tbspns of cocoa powder or hot chocolate powder.&lt;br /&gt;4 tbspns of shredded coconut.&lt;br /&gt;1 tspn  vanilla extract.&lt;br /&gt;1 tspn of rum extract. Also if you open that egg box and they are out of date this recipe contains no eggs.   It's also really easy to double in size or to add choc chips too.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;Ingredients&lt;/span&gt;&lt;br /&gt;3 oz Butter&lt;br /&gt;2 oz Brown Sugar&lt;br /&gt;4 oz Flour&lt;br /&gt;1 oz custard powder&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Preheat over to 350 F&lt;/li&gt;&lt;li&gt;Cream the Butter and sugar together. &lt;/li&gt;&lt;li&gt;Then mix in the Flour and Custard powder.  If its too dry add a tiny bit milk.&lt;/li&gt;&lt;li&gt;roll a spoonful into a ball and place on a baking tray.  Flatten down slightly with a fork.&lt;/li&gt;&lt;li&gt;Bake for 15 min. Try these easter birds nests.&lt;br /&gt;It's one of these recipes that can't really go wrong unless you don't have enough chocolate.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Ingredients - a rough guide!&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;12 weetabix biscuits (if you can't find weetabix, try whole foods, kingsoopers, then use shredded wheat.)&lt;/li&gt;&lt;li&gt;6 oz of shredded coconut&lt;/li&gt;&lt;li&gt;chocolate to cover - about 500g&lt;/li&gt;&lt;li&gt;eggs for the nest, cadury mini eggs are my favourite but if not any will do.&lt;/li&gt;&lt;li&gt;paper cups, we used mini muffin ones.&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;  * Crush the weetabix into what looks like bread crumbs.&lt;br /&gt;  * mix in the coconut.&lt;br /&gt;  * Melt the chocolate following the instructions on the package&lt;br /&gt;  * mix together and then place in paper cups. you need to do this pretty quick especially in colorado as it sets quickly with the dry air&lt;br /&gt; I have lots of good chocolate recipes but i always like to try something different. The First is below, hoping to write about the second soon.  These were by far one of my favourites. Enjoy&lt;br /&gt;&lt;br /&gt;Cookies and Cream Cheesecakes&lt;br /&gt;(suppose to make 30 but be prepared as i made over 40, which required extra oreos)&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;42 oreos, 30 left whole, and 12  chopped&lt;br /&gt;2 lbs cream cheese, room temperature&lt;br /&gt;1 cup sugar&lt;br /&gt;1 tsp vanilla extract&lt;br /&gt;4 large eggs, room temperature, lightly beaten&lt;br /&gt;1 cup sour cream&lt;br /&gt;Pinch of salt&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;1. Preheat oven to 275 degrees.  Place 1 whole cookie in the bottom of each lined cup.&lt;br /&gt;&lt;br /&gt;2. With an electric mixer on medium high speed, beat cream cheese until smooth, scraping down sides of bowl as needed. I had to do this several times. Gradually add sugar, and beat until combined. Beat in vanilla.&lt;br /&gt;&lt;br /&gt;3. Drizzle in eggs, a bit at a time, beating to combine and scraping down the sides of the bowl as needed. Beat in sour cream and salt. Stir in chopped cookies by hand.&lt;br /&gt;&lt;br /&gt;4. Divide batter evenly among cookie-lined cups, filling each almost to the top. They don't rise too much. Bake, rotating pan halfway through, until filling is set, about 22 minutes. (due to the altitude i had to cook them a bit longer about 25-30).&lt;br /&gt;&lt;br /&gt;5. Transfer to wire racks to cool completely. Refrigerate at least 4 hours (or up to overnight). The big decision is always what to make, then one morning i glanced at facebook and Denise had just made a post about "&lt;a href="http://eatplaylove.blogspot.com/2008/12/my-gift-to-you-best-chocolate.html"&gt;the best chocolate peppermint cookies ever&lt;/a&gt;" - well if they are that good i had just better make them!&lt;br /&gt;&lt;br /&gt;Thought i would share the recipe, because after sampling they are that good. This morning i needed to take something along to a meeting so out came the mix.   I did a little mixing up and came up with some cookie bars, as appose to the regular cookies.&lt;span style="font-weight: bold;"&gt;&lt;br /&gt;&lt;br /&gt;Ingredients&lt;/span&gt;&lt;br /&gt;1 pack of chocolate chip cookie mix&lt;br /&gt;1 stick of butter (4 oz)&lt;br /&gt;2 eggs&lt;br /&gt;extra chocolate chips&lt;br /&gt;1 oz oats&lt;br /&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Mix all the ingredients together and spread over a 13x9 pan or an 8x8 if you want them thick.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-weight: bold;"&gt;TIP :&lt;/span&gt;The mixture is really sticky so to spread run the back of a spoon under hot water then spread. Beat the cheese and sugar together and then add the milk until thick.  You will need to keep scraping the bowl as the cheese sticks to it like glue!&lt;br /&gt;2. Dissolve the jelly in the water and then add the juice of the lemon to it, allow to cool slightly.&lt;br /&gt;3.  Blend the jelly and cheese mixture together and then add in the essence.&lt;br /&gt;4.  Pour into bases, for the mini cups i used a soup ladle.&lt;br /&gt;5. I'm sorry i didn't realise there was a meringue season.  To be quite honest if i was going to pick a season for meringues i would have said summer, but apparently I'd be wrong, no alas Christmas is meringue season  - WHO KNEW, obviously not I!&lt;br /&gt;&lt;br /&gt;Anyway in an effort to satisfy my wanting for meringues i thought I'd make some for my self.  If you have a mixer and can separate an egg you can make meringues. Pre heat oven to 225F. Separate eggs and place egg whites in a bowl.&lt;br /&gt;2. Start whisking on a low speed until they get foamy, then increase speed and whisk until the whites look thick and white.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;TOP TIP&lt;/span&gt;- If they are whisked correctly you should be able to tip the bowl upside down and nothing should fall out.&lt;br /&gt;&lt;br /&gt;3. Slowly start adding the sugar and salt and whisk on a slow speed till it has all been added and the mixture appears shinny.&lt;br /&gt;4. Spoon the mixture onto a non stick baking sheet about 1 inch apart.  You can also put the mixture in a pipping bag and pipe them onto the sheet.&lt;br /&gt;5.  Bake in the oven for 2 hours until they become crispy.&lt;br /&gt;6.  If you like a sticky gooey centre then remove them after cooking straight away.  If you want a crispier centre turn off the oven but leave the shells in there until the oven is cool.&lt;br /&gt;7. once cooled fill with cream and serve.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Other Ideas&lt;/span&gt;&lt;ul&gt;&lt;li&gt;Fill with chocolate cream, just add a little cocoa powder to your cream.&lt;/li&gt;&lt;li&gt;Make chocolate meringues - again just add cocoa powder to your mixture.  Just add a couple of teaspoons while adding the sugar.&lt;/li&gt;&lt;li&gt;take the mixture and use it to cover a pie.  Cook at 350F for 30 mins.&lt;/li&gt;&lt;li&gt;Make one large meringue and cover with cream and fruit. IT contained recipes form around the world.  As i drooled through the book this recipe caught my eye.&lt;br /&gt;&lt;br /&gt;I have since made it a few times and have to say the more you make it the better it gets....&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;br /&gt;Ingredients&lt;/span&gt;&lt;br /&gt;I large loaf of bread&lt;br /&gt;8 cups of summer fruits&lt;br /&gt;1 1/2 cups of sugar&lt;br /&gt;3 tablespoons of "liquid of choice" - can use water or a liqueur or wine.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;1 - Wash and cut 8 cups of fruit, try to have at least 3 kinds,  Strawberries, rasps, brambles/blackberries, blueberries and red and black currants all work really well&lt;br /&gt;2. place them in a pot with the sugar and liquid and stir gentle then cover off and leave on a low heat for about 20 m ins.  Only stir occasionally otherwise fruit will start to disintegrate.&lt;br /&gt;3. Meanwhile cut of the crusts of the bread. Take a large bowl and line the bottom and sides of the bowl with the bread.   Leave some bread over for a lid.&lt;br /&gt;4. once the fruit is cooked, place in the bowl and then cover the top with the remaining bread.&lt;br /&gt;5. Place a plate and some weight on top of the bowl.  You may want a tray underneath to catch all that good juice....!&lt;br /&gt;6. This is one i got from a friend through our MOMS Club.  Very quick to make and they taste fantastic.&lt;br /&gt;&lt;br /&gt;Oreo Truffles.&lt;br /&gt;&lt;br /&gt;1 package of crushed Oreos&lt;br /&gt;1 package of softened cream  cheese&lt;br /&gt;1 cup of melted milk chocolate&lt;br /&gt;&lt;br /&gt;Put crushed Oreos into food processor or blender with softened  cream cheese.  Mix until well blended.  Roll into small balls and chill for 15  minutes in freezer. Add the egg and mix thoroughly.&lt;br /&gt;Pour in the milk and oil and mix well.&lt;br /&gt;Add the chocolate chips (if using) and vanilla extract, and mix again.&lt;br /&gt;Put your mug in the microwave and cook for 3 minutes at 1000 watts.&lt;br /&gt;The cake will rise over the top of the mug, but don't be alarmed!&lt;br /&gt;Allow to cool a little, and tip out onto a plate if desired.&lt;br /&gt;EAT! Scottish pancakes are about the size of the palm of your hand and are not usually a breakfast pancake more of a snack with a cup of tea/coffee. they are best served with Butter and Jam.&lt;br /&gt;&lt;br /&gt;&lt;img id="BLOGGER_PHOTO_ID_5248592408493039234" style="DISPLAY: block; MARGIN: 0px auto 10px; CURSOR: hand; TEXT-ALIGN: center" alt="" src="http://3.bp.blogspot.com/_yYdrJrgz9Uw/SNa-_L8KHoI/AAAAAAAAAl0/i4NvKkAXkpQ/s200/pancakes.bmp" border="0" /&gt;&lt;br /&gt;4 0z Sr &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;Flour&lt;/span&gt;&lt;br /&gt;2 0z sugar&lt;br /&gt;1 egg&lt;br /&gt;milk to mix&lt;br /&gt;optional to add in 1/2 oz of melted butter&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;mix flour and sugar &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_2"&gt;together&lt;/span&gt; then add in egg and a little milk, mix well then add in more milk until you get a smooth consistency.&lt;br /&gt;&lt;br /&gt;Spoon onto a pan turning after a few &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;mins&lt;/span&gt;. Some like them burnt and some like them barely cooked. Just don't look at the calories. In fact you should take it as a rule for any of my baking - NEVER LOOK/THINK OF THE CALORIES just enjoy!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;2/3 cup butter&lt;br /&gt;1 box German chocolate cake mix&lt;br /&gt;1 cup chocolate chips&lt;br /&gt;1 tub of coconut pecan frosting&lt;br /&gt;1/4 cup milk&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Heat oven to 350°F and lightly grease or spray bottom and sides of 13x9-inch pan.&lt;/li&gt;&lt;li&gt;In bowl, mix together the butter and cake mix until fine crumbs.Press half of the mixture in bottom of pan. I usually weigh it and half the amount. Then Bake for 10 minutes. &lt;/li&gt;&lt;li&gt;Remove from oven, sprinkle chocolate chips over baked layer. Drop frosting by tablespoonfuls over chocolate chips and spread. Stir milk into remaining cake mixture. Remove from the oven and allow to cool in the tin. &lt;/li&gt;&lt;br /&gt;&lt;li&gt;Mix the icing sugar , peppermint essence and colouring with water to create a thick paste and spread over the base. Allow this to set (preferably overnight). &lt;/li&gt;&lt;br /&gt;&lt;li&gt;Finally, spread with melted chocolate and allow to set. Preheat oven to 350 F.  Beat together the Butter and Cream cheese for 30 seconds.  Then add the sugar, baking powder and salt and mix&lt;br /&gt;2.      Beat in the egg and vanilla and then mix in as much flour as you can, stirring in the rest. &lt;br /&gt;3.      Chill the dough for 1 hour.&lt;br /&gt;4.      Shape the dough into 1” balls and then roll in the coloured sugar.&lt;br /&gt;5.      Place on a baking sheet and snip balls in half and then into 1/3’s so that a 6 point flower is formed. Place coloured sugar in the center and bake for 8-10 &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;mins&lt;/span&gt;. vanilla essence&lt;br /&gt;1 cup and 3 &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;tbspn&lt;/span&gt; all purpose flour&lt;br /&gt;½ tsp baking soda&lt;br /&gt;¾ cup rolled oats&lt;br /&gt;1/3 cup brown sugar&lt;br /&gt;1/3 cup white sugar&lt;br /&gt;¾ cup dried cranberries&lt;br /&gt;¾ cup white chocolate chips&lt;br /&gt;&lt;br /&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;Pre&lt;/span&gt; Pour into the pastry case.&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Bake in the oven at 190C/375F/Gas 5 for 25-30 minutes until the pastry is crisp and golden. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;* Where ever possible best to use Tate and Lyle golden syrup. (if your in Denver i usually put it at 325 and cook for 17 - 20 mins)&lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;Whisk the egg whites in a bowl until they reach the soft peaks consistency. (They should be pure white in colour and you should be able to turn the bowl upside down without anything falling out.) &lt;/p&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;Slowly add in the sugar while whisking on slow.
